Lazy Refrigerator Pickles

Who doesn’t get the craving for pickles? I love pickles. The thing that I hate about pickling is the fuss of it all. Sanitizing, sealing jars, large pots, boiling water and using funny looking tools. There are plenty of people who pickle with great results, however I’m not one of them. My pickles never turn out how I hope they will. The process ends up being more frustration than it’s worth.

A few nights ago I was searching for the perfect pickle recipe. Many of the recipes required boiling ingredients or mixing the ingredients separately before combining and most of them used canning jars. Other recipes called for fresh dill, multi digit amounts of garlic cloves or fancy ingredients I don’t have. I was on a mission to make pickles with no mess and virtually no planning.

So I grabbed a few ingredients and a pyrex bowl and decided to make a no-fuss minimalist pickle recipe of my own. It took me a total of 10 minutes (or less) to prepare these. They turned out delicious, and require virtually no work at all.

Lazy Refrigerator Pickles

1 large regular cucumber (sorry, I already cut it up by the time I took this picture!)
White vinegar (1 part vinegar to 2 parts water, enough to cover the cucumbers.)
Water (1 part vinegar to 2 parts water, enough to cover the cucumbers.)
Few good shakes of dried dill
Pinch of Kosher salt
Pinch of Red pepper flakes
2-3 cloves garlic
Pinch of pickling spice* (from the one time I bought this in college and have never used it since)
*If you don’t have pickling spice use a mix of coriander, crumbled bay leaves, cloves, mustard seeds, allspice, and ginger.

I cut the cucumber and put the slices into the pyrex bowl. Then I poured the vinegar and water over the pickles and added in the remaining ingredients. Since this was an experiment I needed to test them from time to time ;-). Two hours in the fridge and they already tasted great. However, they hit prime deliciousness after 24 hours.

I finished these off pretty quickly and grabbed some more cucumbers while grocery shopping yesterday. I currently have a second batch sitting in the fridge.
